Serves 1 Person
· 2 pieces of French bread or sourdough sliced bread toasted
· A medium sized ripe (but not too ripe) avocado (we love Haas or Reed varieties)
· Sea salt
· Roasted pumpkin seeds
· Rocket salad or micro greens
Spread Vegenaise or vegan mayonnaise generously on toast. Cut avocados in small cubes and place on top. Add sea salt, roasted pumpkin seeds and top with rocket salad (arugula or other micro-greens).
Tip: Roast pumpkin seeds in small pan until medium brown color is visible (about 1-2 minutes on high heat shaking the pan halfway through to turn the seeds).
