· 4 large yams
· 1/3 cup Vanilla soy milk (not light, you want a rich flavor)
· A heaping handful of crushed pecans
· 3 tablespoon maple syrup
· Dash of salt
· 1/2 tsp nutmeg
· 1/2 tsp of cinnamon
· Vegan butter
Cook yams for 60 minutes at 425 degrees or until tender (do a fork check and make sure the fork glides through the yams). Scoop out the yam insides and discard the skin. With a potato masher, smash the yams so they are semi smooth, leaving a few chunks. Add butter and room temperature soy milk and mix. Add maple syrup, nutmeg, salt and cinnamon. Top with crushed pecans.
Loaded with Vitamin A and fiber! Serve hot or cold.
